This is a simple and tasty meat dish that is prepared with whole, hard-boiled eggs. And meatloaf is perfect for a holiday, or for dinner.

Meatloaf with eggs is a delicious main dish that can be prepared for a holiday or Sunday lunch with your family. A delicious mixed minced meatloaf filled with hard-boiled eggs and spinach looks elegant and is very tasty. Recipe shared by Cucchiaio.

To get perfect slices for serving, it’s important to cut the meatloaf only after it has cooled; if it’s too hot, it may fall apart. So ideally, the meatloaf should be prepared several hours in advance, cut when cold, and served as soon as it’s warmed through.

Meatloaf with eggs

Ingredients:

For the meatloaf:

  • 500 g minced beef;
  • 500 g minced pork;
  • 2 eggs;
  • 100 g grated parmesan;
  • 10 g chopped parsley;
  • 10 g chopped basil.

For filling and covering:

  • 250 g spinach;
  • 50 g grated parmesan;
  • 16 slices of bacon;
  • 3 hard-boiled eggs.

To make meatloaf with eggs, combine two types of ground meat, eggs, chopped Parmesan, basil and parsley, a pinch of salt and ground pepper in a large bowl. Mix everything with your hands until you get a homogeneous mixture. Set aside.

Clean the spinach and fry it in a frying pan with a little oil for a few minutes until soft. When the spinach becomes soft, squeeze it lightly and mix with a pinch of salt, ground pepper and grated cheese.

Lay a sheet of baking paper on your work surface. Place the bacon slices on top, slightly overlapping. Then spread the roll mixture over the bacon slices, spreading them out in an even layer and leaving a border of about 1 cm on all sides. Spoon in the spinach puree, then add the peeled hard-boiled eggs.

Using baking paper, roll up the meatloaf, making sure to tighten it well on all sides. Then wrap the roll in paper and close it like a candy. Place on a baking sheet and place in a preheated oven in static mode at 200°C for 40 minutes.

Once this time has passed, remove from the oven, remove the baking paper and cook for a further 10 minutes at 200°C in a fan oven until the top layer is crispy. Remove the meatloaf and eggs from the oven and let it cool before slicing.
