British chef and author Nigella Lawson has recreated the “best omelette” she ever ate while on holiday in Corsica in the Mediterranean.

As Ehrges writes, Lawson considers this dish the best for spring. The original recipe used soft, tangy Broccio cheese. It is made from sheep’s milk and whey in Corsica. The chef suggests replacing it with regular goat.

To prepare this unusual breakfast, take:

  • eggs – 3 pcs;
  • pepper, sea salt;
  • butter – 15 g;
  • fresh mint – 4 sprigs;
  • goat cheese – 100 g.

Beat eggs with salt and pepper. Melt the butter in a frying pan about 25 cm in diameter. Next, add the chopped mint, leaving a little for sprinkling the finished dish. When it sizzles in the oil and turns bright green, pour in the eggs. Next, crumble the cheese and cook, lifting the sides of the omelet so that the eggs drip down into the pan. When the omelette looks almost done but is still a little sticky, fold it three times and sprinkle the remaining mint on top.
