Roulade with whole oranges and mascarpone cream is a delicious, sophisticated and fresh dessert, ideal for a family evening.

In addition to the delicious taste, the roulade also conquers with the spectacular appearance of the whole oranges. They fit perfectly inside the roll sheet, smeared with cream, according to hellotaste.ro.

For roll sheet:

  • 5 medium-sized eggs
  • 125 grams of sugar
  • 50 ml of oil
  • 125 gr flour
  • the peel and juice of an orange
  • a pinch of salt.

For the filling:

  • 300 g of mascarpone
  • 300 ml of whipping cream with 35% fat
  • 100 g of powdered sugar
  • with vanilla flavor
  • 1 pinch of salt
  • 9 medium-sized oranges

Method of preparation

The first step is to prepare the roll sheet. This bakes quite quickly, then it is left to cool while you prepare the oranges and the mascarpone cream.

How to prepare the roll sheet

Start by separating the whites from the yolks in two bowls. Add a little salt to the egg whites and mix them until they become foamy. Gradually add half the amount of sugar and mix intensively with the help of the mixer. When you get a very firm meringue, stop the mixer.

Mix the egg yolks well with the rest of the sugar until you get a foamy and light-colored composition. Add the finely grated orange peel, oil and orange juice. Blend the mixture well, then add a little of the meringue. Use a spatula to mix, then gradually add the sifted flour.

For baking, use a pan with the approximate dimensions of 24/42 cm. Place baking paper in the tray and spread the sheet composition on it. Uniformize it on the surface and place the tray in the oven heated to 180 degrees Celsius. Bake for 20-25 minutes.

How to prepare the filling for a roll with oranges and mascarpone cream

Mix the mascarpone with the whipping cream and powdered sugar until you get a creamy composition. Add a little salt. Put the bowl with the mascarpone cream in the fridge until you assemble the roulade.

When the roll sheet is baked, remove the pan to a cooling rack. Place a moistened and well-wrung tea towel over the roll sheet. Leave the tea towel there until the roll sheet is thoroughly cooled. Turn it out onto a clean baking paper and remove the paper it was baked on. Spread the mascarpone cream with whipped cream over the roll sheet.

Clean the oranges and with a knife remove a little of their ends. This step is important to be able to place them glued together. Place them at one end of the roll sheet, over the mascarpone cream. Then tightly roll the sheet over the oranges.

Wrap the roll in baking paper and refrigerate for at least 2 hours.
