Just 2 ingredients

If you are encountering the term Silesian Stryky for the first time, you may have no idea what it actually is. Silesian patties are the simplest form of potato pancakes that can possibly exist.

It consists of only 2 ingredients, one of which you already know. Potatoes are the basis of stryky. If you want to prepare Silesian stryky at home according to the original recipe, you will only need salt.

What potatoes to use

To prepare this simple but hearty dish, use type C potatoes. They are more mealy and contain more starch. Thanks to this, they will hold together more, even without using flour or eggs.

Silesian streams

First, finely grate the washed and peeled raw potatoes. Then put them in a strainer and let them drain over a bowl for 10 minutes. After this time, squeeze out the excess water from the potatoes with your hands.

Then drain the water from the bowl and keep the starch settled at the bottom. Add it to the grated potatoes, salt to taste and mix well. Use about ½ teaspoon of salt per 1 kg of potatoes. Then make thin patties from the potato dough

The classic was baked directly on the stove

If you have the opportunity, bake stryky directly on stone slabs. This is precisely how true stryky was once prepared, without the use of fat. This delicacy can also be baked in a non-stick pan with a thick bottom. Always fry them until golden brown on both sides.

You can also place the pancakes on a baking sheet lined with baking paper and use a preheated oven for baking. In this case, bake at 180°C for about 30 minutes. Turn the pancakes after 15 minutes.

A final tip

If you want to indulge a little, brush each pancake with melted butter or lard. Silesian sprats can be served not only as a separate dish, but are also a great side dish to roast meat. It goes well with goulash, but also with some cream sauces.
