Potatoes are the most popular and most common side dish for main courses. But try to make their more sophisticated version. Vlasta Burian loved tomato potatoes, and once you taste them, you’ll love them too.

Potatoes are an absolutely classic side dish that goes well with practically everything. You may have thought you knew all their variations.

You’ve certainly had the opportunity to try baked, boiled, mashed potatoes, mashed potatoes, French fries, home-made chips and so on at least a few times. But 99% of you haven’t tried tomato potatoes.

And at the same time, they even won the prize for the best side dish in Paris. The great actor Vlasta Burian loved these potatoes. And you will undoubtedly like them too.

Tomato potatoes

The preparation is not as complicated as it might seem. First, wash 500 grams of fresh tomatoes. Boil them, peel them, then mash them and cut them into small pieces. Now move to the casserole.

Melt 50 grams of butter in it and add 3 cloves of crushed garlic, a pinch of salt and ground pepper, and finally a spoonful of finely chopped parsley. Bring everything to a boil in the pot and add the mashed tomato pieces. Mix lightly.

Place the saucepan on the stove and heat it over a low flame to an ideal temperature of 80 degrees Celsius. Leave it like this until all the water evaporates and mix it from time to time. The tomatoes must not be cooked and should be thick like puree by the end. While the water is slowly but surely evaporating, boil 500 grams of potatoes in salted water. Make a thick mashed potato out of them.

You can serve

And you’re basically done. Pour melted butter on top of the porridge and create a wreath from the porridge on the plate. Then place a mound of prepared tomatoes in the middle of the wreath and voila. A light, yet incredibly tasty recipe that will be loved by everyone you serve it to.

This recipe will undoubtedly fill you up, but at the same time, it is not made with any unhealthy ingredients, so you can eat it whenever you feel like it.
