Swap store-bought dry pasta for fresh, home-made pasta. They are not only much softer, but also smell beautiful and have a much more pronounced taste. They are so delicious that they can be eaten by themselves! And their preparation is so simple that even a beginner in the kitchen does not have to worry about it.

Italian dough

The secret to a perfect result lies in the selection of quality ingredients and the proper kneading of the dough. First, mix 150 g of plain flour, use only with the 00 label, and 50 g of durum wheat semolina (semolina). Add 2 whole raw eggs, which should be at room temperature, to the flour mixture.

Stir the mixture first so that all the ingredients are properly combined. Then knead the dough thoroughly with your hands. If it happens to be thick, just dip your hands in water and work it once more. Of course, you can also use a food processor for preparation. The dough can be prepared without eggs, just replace them with water.

Let the dough rest

Then wrap the dough in cling film and let it rest for at least ½ hour before using. Store it in a place where the temperature is constant.

Then roll out the dough on a previously floured rolling pin into a sheet and form the pasta according to the desired shape. You can also use a pasta machine. The dough should never dry out during the work, because it would tear. It should remain beautifully elastic throughout.

The dough can be prepared in stock

The dough can also be stored in the refrigerator for up to 1 week. In addition, the Italians put it in a dark paper bag for better quality. It will surely come in handy for preparing a quick and tasty dinner. Shaped pasta can also be put in the fridge in the same way, but it is necessary to thoroughly flour it so that it does not stick together.

It is recommended to cook them within 2 days. If you want to keep the pasta for a longer period of time, you can put it in the freezer. But first, place them in separate boxes or bags according to type.
